This lamb recipe is super easy and is super quick to make. Although I don’t eat red meat, this recipe never fails! I like to serve it with mash and some grilled asparagus and its just the perfect dinner recipe! Cooking time is super short depending on what you decide to pair it with!

Ingredients
6 Lamb chops
2 Garlic cloves, minced
Pinch of sea salt & cracked black pepper
1 tsp of fresh thyme, chopped
1 tsp of fresh rosemary, chopped
1 tsp of fresh ginger, minced
1 tsp of chopped scotch bonnet
1tsp of paprika
½ tsp of ground coriander
½ tsp of mustard powder
Drizzle of olive oil
Pinch of rubbed mint
Method
– Combine all ingredients into a bowl, cover and allow to marinate in the fridge for an hour.
– Heat a tablespoon of oil in a pan.
– Grill the lamb chops on medium to high heat for 10 minutes, turning over ensuring both sides are cooked. (If you have a griddle pan, you can make grill marks)
– Allow the chops to rest for 5 minutes then serve with creamy mash! Drizzle the juices from the lamb over your cooked dish!
TIP
Put your mash potato into a ziplock bag, cut half an inch off one of the corner and pipe a cute swirly pattern!
