These tacos are so delicious, they’re simple to make and so flavoursome. Use this recipe to recreate the perfect street food, it serves 10 which makes these tacos the perfect dinner party feast!

Ingredients
Chimichurri Radicchio Slaw
Cilantro, 1/2 cup
Radicchio, 1 small
Garlic, 3 cloves
Green onions, 1 stalk
Red chilli pepper, 1/2 tsp
Olive oil, 2 tbsp
Red wine vinegar, 2 tbsp
Jerk Pulled Pork
Pork shoulder, 5 – 6lbs
Jerk sauce, 1tbsp
Soy sauce, 1 tbsp
Browning, 2 tsp
Spice blend: ginger powder (1 tsp), paprika (1tsp), cayenne pepper (1/2 tsp), cloves (1/2 tsp)
Oil, 1tbsp
Method
Chimichurri Radicchio Slaw
– Finely mince cilantro, garlic & chilli pepper and add to a bowl
– Thinly slice radicchio & green onion and add to a bowl
– Add in olive oil, red wine vinegar and a pinch of salt and mix together well
– Let refrigerate for at least two hours before enjoying.
Jerk Pulled Pork
– Clean pork shoulder in water and lime juice, pat dry
– Score pork shoulder to make thin slices in the meat
– Coat pork in a thin layer of oil. Then add jerk sauce, browning and soy sauce and rub in
– Add on spice blend, being sure to coat pork on all sides in the marinade
– Sear pork on all sides in the bottom of a heavy pot / dutch oven, on high heat
– Roast pork in the oven on 400F for 2 hours
– Add 4 cups of beef broth to the pot and return to the oven for another hour
– Remove pork from pot and shred. Then add back to the pot and serve.
– Enjoy with tortillas and radicchio slaw along with any other toppings you like.
